Cabbage Roll Soup

Cold Winter days are definitely days I want to pull my slow cooker out for a warm and hearty soup or stew. This soup definitely borderlines a stew, however has enough liquid to be called a soup, so I will stick with that! This is a chunky, meaty and really filling dish especially when paired with a high quality carb such as quinoa, a hearty wholegrain bread or brown rice. (We can't get past a yummy brown toasted bread -kid friendly and extra filling!).

 

In addition to this soup filling us up, it is also a meal that makes a busy parents life easy because it is easily adjustable. We all know how difficult it can be to make a dish that suits everybody's tastes! So creating meals that can be made to suit different peoples tastes is a bonus right?! This soup does that! It's so flexible - the versatility of this soup is what I love the most!

 

As you can see in the picture I added in some baby spinach leaves at the end until they were slightly wilted for some greens - I did that for me. I left the soup as is for my 2 young boys and my husband adjusted his with some extra pepper at the end - each variation slightly different but the cooking process the same (Thank you amazing slow cooker)!.  

 

Meals that are easy to adjust to each persons preferences makes life that little bit simpler right?! So here are some added suggestions to adjust the recipe and make it your own!

 

More spice? Add chilli

Additional garnishes? Try parsley 

Vegetarian? Replace beef with legumes

Don't want beef? Use ground chicken breast or turkey breast instead


Nutritionally speaking this soup is;

  • Each serve is approximately 236 calories*

  • Good source of iron 

 

Here is the recipe - Serves 6, Left overs freeze well! 

 

Ingredients

  • 1 Cauliflower (processed into rice)

  • 4 cups Green Cabbage (roughly chopped)

  • 1 Onion (diced)

  • 4 Garlic (cloves, minced)

  • 500 grams Extra Lean Ground Beef 

  • 500 gram jar of Organic Pasta Sauce

  • 1 can Crushed Tomatoes 

  • 1 tbsp Italian Seasoning

  • 1 tsp Sea Salt 

  • 2 tsps Black Pepper

  • 1 cup Water (I like to add 1 cup of water to the empty jar of sauce, shake to get remaining sauce and use) - adds a little more flavour!

 

Directions

  1. Use a food processor to rice your cauliflower.

  2. Add all ingredients to the slow cooker, stirring to combine. Cover with lid. Cook on low for 7 to 8 hours. 

  3. Prior to serving, take the lid off and use a wooden spoon to ensure the soup is well mixed through.

  4. Serve and Enjoy!
