Super Simple Berrylicious Chia Pudding!

Mornings (or just life) can get busy right?! And as a busy mum, its all too easy to place yourself last in the pecking order when it comes to breakfast or any meal for that matter! Your focus is so often on everyone else (understandably!) that ensuring you are eating as well as possible can be a task that just doesn't get the attention it deserves. I get it. It's the same for me, if I don't forward think about my food choices for the next day, or the kids food it becomes a task that can quickly spiral out of control and all of a sudden we get stuck in a sea of different and mostly unhealthy eating patterns and habits. These can include but are not limited to; 

  • Meal skipping, this can lead very quickly into; 

  • Over eating for the remainder of the day

  • Snacking more (usually on highly processed, high cal and low nutrient dense foods)

  • Eating out more (and lets be honest- takeaway options aren't great out there and they will never be as good as what you could prep at home)

 

The list can go on and on. Patterns become habits and we all know how difficult it can be to overcome bad eating habits. Ultimately they impact out health in a pretty severe way. And that's why meal prepping (all meals) but most importantly breakfast is a sure-fire way to set you up for a healthy day. It's at the very least going to guarantee you a great start anyway! If you are already amazing at having breaky, then you can up your anti with your nutrition by adding this delish meal in every now and then! 

 

Why is this recipe so good?

  • It has a serve of fruit

  • Is high in protein

  • Is an excellent source of calcium

  • Is high in fibre

  • Great source of healthy fats

  • Is quick and easy to prepare the evening before & will last in the fridge in an air tight container or jar for up to 4-5 days.

  • It is nutritious, and importantly delicious.

And that list is not exhaustive! This Berrylicious Chis Pudding ticks all these boxes and more. And the best bit you can prep in advance to ensure your mornings are smooth and you are looking after yourself! Here is it;

 

Serves 2

Prep time 5 minutes

Set overnight 8hours

 

INGREDIENTS

6 tbsp Black Chia Seeds

2 cups Skim Milk (or milk of choice)

1 tbsp  Maple Syrup

1/2 tsp Vanilla Extract

1/2 to 1 cup of Mixed Frozen berries (or fresh), (amount depends on your preference)

 

DIRECTIONS

1. Place all ingredients (except berries), into a mason jar or air tight container and mix very well. If in a mason jar give the jar a good shake also to ensure the Chia seeds don't clump together. 

2. Place in fridge to set over night.

3. To serve, warm up frozen berries in the microwave for 30-40seconds (or add fresh berries), stir through and enjoy! 

 

NOTES

You may need to give jar another shake before adding the berries to reduce clumps if they have formed.

This pudding can be enjoyed for dessert, a snack or for breakfast!
